Bananatastic!

Last night, I made an awesome smoothie .  Super yummy and healthy.  Thought I'd share it with you!

  • 11/2 frozen ripe banana (peel the skin ahead of time, then throw into freezer overnight)
  • 1/2 of the inside of a young coconut (find at asian grocers - the soft meat pulls out of the shell easily)
  • 10oz of almond milk unsweetened (substitute with your "milk" of choice)

Blend till smooth.  I used a magic bullet 'cause it was convenient.  Whatever blender you have at home will do.  

It's sweet and fragrant from the ripe banana, and rich and creamy from the coconut meat.  How simple is that?  If you can't find young coconuts, don't worry about including them.  I've made this without it and it's still tasty.  Kids love it 'cause it's such a treat.
